Title: Guamanian Chicken with Finadene Sauce
Categories: Hawaii Chicken
Yield: 4 Servings

10lbChicken thighs
2 1/2cSoy sauce
2cLime juice (about 15 large
  Limes)
  Rinds of 5 squeezed limes
1cCatsup
1cSugar
1 Chopped onion
  Finadene Sauce:
3tbSoy sauce
1/4cChopped onions
2smHot red chili peppers
1/4cLime juice
1/4tsSalt

Mix all ingredients except chicken in a container large enough for 10 lbs. Place chicken in container, cover, and marinate for one to three days. The longer the chicken marinates the more flavorful it will be. When ready to cook, drain off marinade, and grill or broil. The chicken has the best flavor if grilled over a low charcoal fire. Put chicken on a large platter and serve with finadene sauce on the side.

Finadene Sauce: To prepare sauce, simply mix ingredients.
